We grew butternut squash in the garden this year. With all the rain we had this past weekend, I decided a raining cool day, would be a good day to put the squash in the Crock-pot and cook it to have when needed. I put a little water at the bottom and cooked the squash until it is soft.
I use the squash in Butternut squash "Pumpkin Pie", soup and other recipes. Please see the recipe tab for information on the pie.
After a few hours on high, I scoop it out of the shell and place it in a bowl. If I don't use it within a few days, I freeze a portion of the squash to use later.
